On Friday the 23rd March guests enjoyed a wonderful evening with Rachel Allen. The celebrity chef entertained and taught us how to cook Salmon & Chive Fish Cakes, a Beef & Kale Stir fry, a Pork & Cider with Apple and Creme Fraiche Dish - all really easy and delicious meals for all the family. Rachel cooked up 5 dishes in total, one for each day of the week and ideal for busy families on the go.

Wondrous winds and waves washing in, Golden light with rainbow arching in on the emerald green land around Inchydoney Island. We (high) above sea and surf watching and listening to the water proceeding, receding the tides like the rhythm of natures beast. Healing and cleaning the waterways of our mind, body and soul
The Inchydoney Kitchen Herb Garden is in progress. An area in front of the pool, beside Dunes Bar & Bistro has been designated. The ground was fairly rough and stony, but has been cleared and dug over. During the winter months seaweed collected from the beach and compost made at the hotel from waste food will be dug into the ground and left to enrich the soil. This time will also be spent making a pathway and steps up to the Herb Garden. In the Spring, when hopefully the weather will improve, a selection of herbs will be planted for the Kitchen to use in their cooking. The choice of herbs will be decided upon by the Head Chef Alan Medcalf who is working closely on this project. Looking forward to Spring to seeing the rewards of our hard work and cold fingersâ¦..
A group of us went out with Jim Kennedy of Atlantic Kayaking on Saturday afternoon. We had a great afternoon â the weather was glorious for November. To change from the seas of West Cork, we decided to brave the city and took to the River Lee in the middle of Cork.... We had to paddle a bit in paces but overall it was heavenly. A bit of exercise but never strenuous. Once when things were very calm a large seal started nosing around us. Really cool. Great to get out and get a bit of fresh air and â particularly at this time of year. As usual the gear and guidance were brilliant â so professional and interesting. Fair play to them.
